Chicken Brine

Ingredients

  • 1/2 gallon water
  • 1/2 gallon ice
  • 2/3 cup kosher salt
  • 1/2 cup honey
  • 2 large bay leaves
  • Directions

    1. Combine all ingredients.
    2. Bring to a simmer in a large pot over medium-high heat.
    3. Heat until salt and sugar are dissolved completely.
    4. Remove from the heat and cover with a lid.
    5. Refrigerate to cool before using, at least 1 hour.
    6. Brine chicken, fully submerged, for up to 8 hours.
